Paulette's Famous Popovers

When I was around twelve years old my mom introduced me to what would become my favorite restaurant in Memphis - Paulette's. Since then, many birthdays, holidays, graduations, and special events have been celebrated here. A signature food to Paulette's is their Popovers - and they published their recipe (couldn't believe it)! Here's the recipe (although they are best with the strawberry butter):
Paulette's Famous Popovers
Ingredients:

  • 1 cup all purpose flour - sifted

  • 3/4 tsp. salt

  • 1 cup milk

  • 1 Tbsp. oil or clarified butter

  • 2-3 eggs, room temperature, not mixed

Directions:

  1. Mix flour and salt together.

  2. Add milk and oil together, add to flour mixture and stir until well comined

  3. Add eggs, one at a time mixing well after each addition then beat mixture for two minutes

  4. Warm popover pans (or standard muffin pan) - season with vegetable shortening

  5. Pour batter into pan filling each cup 3/4 full

  6. Bake in a 415 degree oven for 30-40 minutes until popovers are a deep golden brown and sides are very crisp

  7. Remove from oven, slit with a knife to let out steam and crisp the popovers inside

  8. Dust with powdered sugar and serve hot with butter and jam

Bon Appetit!

Sweet Memories

Since I am pregnant, and this is our first child, many people have felt the need to tell us how drastically our life is going to change and to take advantage of the time we have left "just the 2 of us." We know that spontaneity will most likely diminish also, so we decided to take everyones' advice and head downtown for a date night on a MONDAY night. And then again on Tuesday night. My favorite thing is spending time with this guy. And because my memory will continue to get worse, and I'll wonder during the 3am feedings what life "used to be like," I'll look back at these memories and smile...

Dinner at Spaghetti Warehouse...remembering when we used to come as kids and looking forward to introducing Liam to it someday.

Rooftop of the Peabody...where Will proposed 8 years ago. :) So thankful to be married to Will and the great memories we have made...and the fun to come in the future!

What is an appendix for anyway?!

Our bags were packed for High School Summer Camp and we were looking forward to hitting the beach with the students for a week. Then, less than 20 hours before we were to leave sharp pain suddenly hit Will in the abdomen, and Sunday afternoon we made a visit to the Minor Med. Then they sent us to the E.R. (still with no idea of what was going on) at Baptist. As Will sat doubled-over in pain (and I tried to stay calm for his sake and the baby's), I was thanking the Lord that the E.R. was not busy and for the tremendous help of the staff. Later in the afternoon CT scans were made and fluids were being pumped through his veins...then a doctor came in and first thing out of his mouth was, "So, you know a good surgeon?" Huh? Please explain what's going on! He then said that Will would need surgery to remove his appendix and thought surgery would happend within a few hours. After a series of events (too boring and frusterating to list here) we finally got him off to surgery (thanks to our incredible Primary Care Dr) on Monday. The surgeon said it was good we came when we did - the appendix was black and likely to rupture soon. Although we had to miss Camp (4 days in the hospital and then recovery), looking back we see that God's timing is perfect. If Camp was not the next day, we wouldn't have felt the urgency to get Will checked out, and the Dr. said if we had waited, the appendix would have ruptured. So thankful for the Lord, His protection and provision, and for our family and church family that prayed and took such great care of us during this time.

I think this is how just about everyone feels when they are in the E.R. Poor guy.

27 Weeks

The 27 week update on Baby BOY McKay:

  • Progress: 27 Weeks (pic is 27 weeks & 5 days)

  • Size: Head of a cauliflower (16 inches, 2.5 lbs)

  • Development: His hearing is progressing and he can recognize Will's voice and my voice. His taste buds are developed and he has more taste buds this week than he will have the rest of his life. Still lots of movement!

  • Symptoms: I woke up in the middle of the night yesterday with my first experience (ever) of heartburn. I definitely will not be drinking ginger ale before bed again!

  • Highlight of the Week: The past week has been kinda crazy...Will was in the hospital for 3 nights and had an open appendectomy. More about that experience in the next post. :)
