When I was around twelve years old my mom introduced me to what would become my favorite restaurant in Memphis - Paulette's. Since then, many birthdays, holidays, graduations, and special events have been celebrated here. A signature food to Paulette's is their Popovers - and they published their recipe (couldn't believe it)! Here's the recipe (although they are best with the strawberry butter):
Paulette's Famous PopoversIngredients:
- 1 cup all purpose flour - sifted
- 3/4 tsp. salt
- 1 cup milk
- 1 Tbsp. oil or clarified butter
- 2-3 eggs, room temperature, not mixed
Directions:
- Mix flour and salt together.
- Add milk and oil together, add to flour mixture and stir until well comined
- Add eggs, one at a time mixing well after each addition then beat mixture for two minutes
- Warm popover pans (or standard muffin pan) - season with vegetable shortening
- Pour batter into pan filling each cup 3/4 full
- Bake in a 415 degree oven for 30-40 minutes until popovers are a deep golden brown and sides are very crisp
- Remove from oven, slit with a knife to let out steam and crisp the popovers inside
- Dust with powdered sugar and serve hot with butter and jam
Bon Appetit!
