Mmmm...Made this yummy (and super easy) chicken for the first time on Wednesday. It was so great to put it in the crock pot, go to work, and walk in the door at 830 that night with dinner already prepared. This will definitely be a repeat!
Creamy Cooker Chicken
1 envelope dry onion soup mix
2 cups light sour cream
1 can 98% Fat Free Cream of Mushroom soup
6 boneless, skinless chicken-breast halves
Combine soup mix, sour cream, and cream of mushroom soup in slow cooker. Add chicken, pushing it down so it is submerged in the sauce. Cover. Cook on low 8 hours.
I served it with green beans and red potatoes. Enjoy!

"I"

A challenge from one of my favorite authors and heroes in the faith:
"Sometimes it is in the smallest, most unseen things that Christ comes and says: 'See in it a chance to die. Die to your own thoughts and opinions, to your I in all its little private preferences.' For the deepest and greatest spiritual truth always meets us in the practical matters of everyday common life." ~Amy Carmichael "Whispers of His Power"

Time Enough
Ever have those days when it seems like there is so much to do and not nearly enough time in the day? When I feel the very beginnings of "frazzeledness" I remind myself of these words from Elizabeth Elliot:
"There is always time enough to do the will of God. The great thing is to make our planning subject to God's perfect plan, laying our agendas at His feet and asking Him to help us choose wisely. All of us have duties. How gratefully and calmly we carry them out will indicate how we have obeyed Him."
What a great reminder!

Prayers for Haiti
We ministered to orphans and widows in our time in Haiti, and I met sweet friends and partners in ministry. Today I pray for the Headys (missionaries to Haiti for over 20+ years), the Chatmans (missionaries that bring and host teams throughout the year), teachers of the Haitian School for the Deaf, teachers of the orphanages, and the sweet children.
My heart is burdened for the men and women that shared with me that they could not accept Christ because their village practiced voodoo and they would be killed. May people see the One True God through this difficult time and turn to the only One who can save.

If you win the book (or buy it from the bookstore), I would love to hear your thoughts on it! I can't wait to start it myself! Happy Reading!
Biggest Loser

There is only one show on t.v. that I watch..."Biggest Loser." Tonight is the first night of Season 9, and I am excited! One reason I'm excited is that at work we have a wellness program for the staff, and this semester's theme is Biggest Loser. We form our own teams of 3, have our first weigh-in and health assesment tomorrow at 9am, and we are competing against other teams. I'm excited about my team (they will keep me accountable - I have to weigh in every week and report it to them)! One of the goals I had for this year was to consistently exercise, because I have been sporadic (at best) in the past. To complete the program at work, you must either lose 10 pounds by May or exercise 35 minutes 3 times a week. My goal (you have to help me stick to it) is to exercise 60 minutes 3 times a week...starting tomorrow morning! I already have my shoes and clothes laid out and ready to go! I also have a partner to work out with and keep me accountable on Tuesdays and Wednesdays. It makes the time go by so much faster when you have someone else to chat with!
Well, "Biggest Loser" Season 9 starts in 3 minutes, and my "Season 1" starts in 14 hours!

Fudge, Funnel Cakes, & Fun
We just returned from Sr High Winter Camp in Gatlinburg, TN (more pics & info at http://www.bellevuestudents.org/). This was Will and my first trip to go on together as student staff. The week was full of great teaching from God's Word, conversations with some incredible young ladies, and worship to the Most High God. That makes a great week! A few pics from our trip...and although there was tons of fudge and funnel cakes, I didn't have one bite!
